personally, id go for an SE. No real reason not too IMO.

personally I went for an SE as I wanted the sunroof, cruise etc etc.
The non SE's are good cars as well though, and will be lighter as a result of not having the SE goodies!

A lot of non SEs (especially MKIIs) have sunroofs as extras anyway, and if you want lighter this is where most of the weight is.
I used to a own a non SE and it was great I loved the simplicity but now I have an SE and love the toys...
I think however, most look for an SE.
Point to note is the tax so cars registered after 23/03/06 are in the new tax banding and thus it is approx £200 more to tax

This is good for the money, but remember the higher tax and this is a non SE if you want to go down that route, but with a sunroof
On the tax issue just remember that the £200 or so difference is marginal if you do anywhere near average mileage. Its only going to get you an additional two tank fills a year so I would not let that put me off a particular car.

MKI SE would be my choice. SatNav disc can be updated and I can live without postcode entry and speedcam warnings (never drive too fast anyway)
Sunroof, electric/heated seats, auto dimming mirror and the absense of traction control.
You can still open the boot with a flat battery or remote gone.
Main thing is, get a 260
