Welcome Jake, I recommend taking up membership of the MGOC. Full access to the two-sixties forum is a valuable asset.
And congratulations for the brave choice ! It is not an easy car to own and run on the continent. But it's possible if you are a handy enthusiast or have a competent (read: old school) and reasonably-priced mechanic. In my honest opinion (some on the 75/ZT website will disagree), the V8 is a smarter choice than the V6, because Ford parts will be more easily available. And the Two-sixties have been very good at re-sourcing or manufacturing V8-specific parts. And of course the sound and handling of the V8 are so much more fun.
One big upside for LHD owners is the ample legroom and the driver footrest.

Thanks for the warm welcome lads, i will certainly get the MGOC membership as soon as i can. Im off to do the last drain tube, cut the rear duckbills off and maybe regrease my front brake caliper pins for kicks.
